Breakfast is the most important meal of the day, and pancakes are one of the best breakfast recipes out there. Pancakes are also easy to prepare, and you can create different variations, sweet or salty, with lots of ingredients. Here is a collection of five delicious pancake recipes chefs like Javier Burillo recommend that you try at home.
1- Chocolate Star Pancakes
For this recipe, you will need:
½ cup of flour
½ cup of milk
One egg
One teaspoon of oil
A pinch of salt, sugar, and baking powder. Optional: vanilla essence.
– In one bowl, mix the flour with the salt, sugar, and baking powder (if using). Add the egg and whisk until smooth. Gradually add the milk and keep whisking until you get a smooth mixture. Make sure there are no lumps.
– Pour the oil into another bowl and add ¼ cup of milk. Keep the rest of the milk for later use.
– In a third bowl, put the chocolate chips and melt them over a bain marie (bowl with hot water) or in a microwave oven at medium power (50% – low). Stir them from time to time until you get a smooth mixture. Now add the rest of the milk and keep stirring until you have a smooth consistency.
– Combine all three bowls in a large bowl and whisk well until you get a uniform batter with no lumps or bits in it. Make sure the chocolate has blended well with the rest of the mixture.
– Heat a teaspoon of oil in a frying pan over low heat and pour spoonfuls of your pancake mix, forming small pancakes. Cook them for about two minutes on each side or until they are cooked all the way through.
2- Raspberry Pancakes
For this recipe, you will need:
½ cup of whole wheat flour
½ cup of raspberry (jam, puree, or fresh raspberries)
One egg
One teaspoon of oil
A pinch of salt, sugar, and baking powder. Optional: vanilla essence.
– In one bowl, mix the flour with the salt, sugar, and baking powder (if using). Add the egg and whisk until smooth. Gradually add the jam and keep whisking until you get a smooth mixture. Make sure there are no lumps.
– Pour the oil into another bowl and add ¼ cup of milk. Keep the rest of the milk for later use.
– In a third bowl, put the raspberries (fresh or frozen) and pour boiling water over them. Let them sit for a couple of minutes, and then remove the seeds from the mixture. If you are using jam or puree, do not add boiling water. Just mix well, so the fruit is distributed in the paste.
– Combine all three bowls in a large bowl and whisk well until you get a uniform batter with no lumps or bits in it. Make sure the fruit has blended well with the rest of the mixture.
– Heat a teaspoon of oil in a frying pan over low heat and pour spoonfuls of your pancake mix, forming small pancakes. Cook them for about two minutes on each side or until they are cooked all the way through.
These two recipes can be prepared in roughly the same amount of time, just a matter of mixing different ingredients. They will give your breakfast a sweet and delicious twist that your family and friends will love.
